Starting your day with a great breakfast is important, especially to fuel up for a full day of yoga, surfing, or hanging out on the beach in Santa Teresa, Costa Rica.
Pranamar Oceanfront Villas is unveiling a new menu at their Santa Teresa beachfront restaurant, Buddha Eyes. It includes imaginative and original breakfast, lunch and dinner dishes created with local and fresh products that complement Pranamar Villa’s healthy yoga retreats and classes.
Kick-start your morning with a healthy breakfast omelet made with organic vegetables and served with homemade gluten-free toast, or maybe a Costa Rican style breakfast burrito with fresh tropical fruit on the side. A zesty local version of huevos rancheros with homemade salsa and guacamole will put pep in your step. If you like sweetness in your life, you’ll love the coconut-encrusted French toast served with tropical fruit. For a lighter breakfast, try the chia bowl with fresh coconut milk, fruit, nuts and seeds; or the granola-yogurt-fruit bowl combo.
You can’t visit Costa Rica without trying the traditional breakfast of gallo pinto! Pranamar’s version features rice and red beans mixed with fresh spices and accompanied by eggs, sweet plantains, fresh avocado slices and farmer’s cheese.
“Most of our products we use in our dishes are produced right here – from the granola to our breakfast tortillas and all kinds of bread,” said Norman Roqhuett Mata, who is working with Pranamar Villas to re-design the Buddha Eyes Restaurant. “In addition, our new desserts are made fresh in-house, including vegan and gluten-free options.”
The Santa Teresa beachfront hotel has its own completely organic garden that provides the kitchen with fresh arugula, basil, mustard, habanero peppers, cherry tomatoes, and more. Other star ingredients are undoubtedly its fresh seafood, which they get every day from local fishermen, such as freshly caught yellowtail tuna and white fish, as well as fruits and vegetables that are mostly organic.
“Our menu emphasizes fresh, local products with Asian and Mediterranean trends but without neglecting our tropical roots,” Norman elaborated. “So, our food is a mixture of different cultures but always using local products.”
During the heat of the day at lunchtime, the dishes to order are chilled ceviche, made with the freshest seafood, and “modern and healthy” salads with vegan, vegetarian and gluten-free options, Norman said. In the evening for dinner, you will taste dishes like grilled octopus with smoked carrot puree, or the delicious “Rice-and-beans” that will transport you to Costa Rica’s Caribbean Coast.
Buddha Eyes Restaurant serves breakfast, lunch and dinner seven days a week and is open to the public. Breakfast is served from 7:00 a.m. to 12:00 p.m. and the restaurant stays open until 9:00 p.m. Dinner reservations are recommended.
